Being happy ? Well let me tell you I never think about life with those words, really.

But going to the fresh food and veg market in Province in France sounds like paradise sometimes. Like today, an italian friend is joining for coffee, I bought a poulet fermier means a good Bresse chicken which is one of the top top AOC in France for chicken quality, and violet artichokes and a couple of other fruits and vegetables all is slowfood because my townhouse is near countryside.

Today for sunday lunch a classic Roasted chicken de Bresse plus panfried garlic and onions Charlotte potatoes, green fresh tossed salad seasoned with Moutarde de Dijon Maille, fruits de saison which are tangerines.

Ce soir ce sera plateau télé avec ou sans tv. Mais avec des filets de sardines à l'huile d'olive, millésimées de Penmarc'h en Bretagne.

Mon truc, un joli plateau avec une tranche de citron, des pickles et du gingembre japonais en saumure, des grosses câpres fruits d'Italie et des cornichons russes aigre-doux Molossol et bien sûr du pain toasté. rmf.

yesterday was the most perfect day to tour around in Burgundy, the wine region. It's was a bright sunny day in the capital of good wines, hot mustard the only one the true "Moutarde de Dijon" a craft of which origines are in in this town.

MAILLE famous mustard de Dijon brand, located in the middle of the historical and heritage town of Dijon is THE place to buy mustard. But why?

Oh it's simple 1 it's beautiful 2 it's renown 3 the service is top 4 the MOUTARDE is tap served in delicious crafty mini earthenware jugs, fitted and bespoke 5 what else?

NB they had a quite famous motto:

IL N'Y A QUE MAILLE QUI M'AILLE.

(translate, there's only Maille mustard that's suiting me)

RECETTE DU BŒUF BOURGUIGNON À LA BOURGUIGNONNE

RECETTE DU BŒUF BOURGUIGON DE BOURGOGNE

1 choisir une pièce de viande à braisé j'ai choisi du Charolais bien sûr (paleron, ou macreuse, jumeaux ...)

2 récupérer du vin rouge et du vin blanc si vous le voulez ou ouvrez une bouteille de Pinot Noir

(mon truc je rajoute à des bouteilles de vin rouge anciennes genre trop vieilles pour être bues du vin blanc, Chardonnay et Pinot Noir)

MARINADE de 2 heures à une nuit maximum.

1 émincer un oignon doux et un ail

2 découper la viande en gros cubes

3 saupoudrer de 4 épices et de muscade une pincée de chaque

4 recouvrir d'une partie du vin et laisser reposer en ajoutant quelques dés de carottes 

CUISSON

1 singer les morceaux de viandes dans la farine et faire dorer rapidement

2 dans une cocotte épaisse en fonte si possible verser tous les ingrédients viande marinée, carottes, un bouquet garni, les oignons et l'ail, salé et poivré, pas trop pour éviter de durcir la viande et le ou les vins et couvrir.

3 cuire à feu doux au moins 2 à 3 heures

SERVIR

avec des pommes de terre à l'eau avec un peu de persil. Ou avec une touche transalpine de la polenta qui s'accommode parfaitement de viandes en sauces. 

NB 1 certains rajoutent un carré de chocolat noir à cuire pour donner de la couleur dans le mélange avant la cuisson

2 on peut faire flamber l'alcool avant de faire mijoter le tout pour enlever le goût d'alcool 

3 quand on fait dorer les viandes il ne faut surtout pas remuer la casserole et pas utiliser de beurre mais de l'huile, truc de chefs.

4 ici sur la photo j'ai utiles du Pinot Noir un Savigny les Beaune du domaine Tollot Beaut Les Lavières 1998

et un vieux Meursault.

Le plus populaire des plats est italien.

Un des derniers témoignages du savoir faire français en matière d'artisanat. Le vin et la couture peuvent très bien se marier, les deux n'existeraient pas sans le talent des hommes. En effet le vin n'existe pas à ma connaissance à l'état sauvage ou naturel. Il est le résultat d'un certains nombre d'actions précises et maîtrisées. Et de pas moins de deux fermentations quais magiques sinon chimiques, la première la fermentation alcoolique qui donne l'alcool et l'autre la fermentation malo lactique celle qui transforme le jus du raisin alcoolisé en vin. Le Festival des Arts de la Rue

Burgundy and more attractive South Burgundy is mainly heritage landmarks, grand châteaux like Ducs de Mac Mahon's Sully, named the Burgundy Versailles, roman churches, and vineyards regions, producing the best Pinot Noir, Chardonnay, Alligoté and Gamay, sparkling Crémant wines. Including the most acclaimed and famous red wine from Romanée Conti and white wine from Corton Charlemagne, the top of the top, no wine but experience actually.
But in summertime this is no more the posh and classic Beaune city, pearl of Burgundy to lead the orchestra, it's a small down south town at the cross roads of everything, heritage like the photography inventor hometown, Nicéphore Niépce, Les Rousses ski region, fishing rivers, countryside, I named Chalon a best kept secret along the beautiful Saône (pron. soan) river, located south of Dijon and north of Lyon.
A street art festival is taking place there every year around the 19/20th of July, lasting 4 days and for the great pleasure of thousands of tourist families and fairly good popular street artists performing walking down the streets of the historical town.

At nite friends got together in bars and improvised street bistrots, none-the-less food is excellent, meat from Charollais region being known as one of the top list best cows in the world giving the best cheeses too! Here on my pic the famous night meeting hipster spot LES 120.
Although Vin Rosé is not a special of this region, it's okay when temperature is too hot outside, it gets sometimes up to
90F but is normally around 72F then as we drunk it with plates of great homemade saussages and andouillettes with Moutarde de Dijon a waouh snack and then another friend joined the party and decided to offer Dom Ruinart a great Champagne just for the pleasure of it. And so on for the whole night.

GUESS WHO IS COMING FOR DINNER? Mr. PRESIDENT

  Actually as any one in France I didn't know who was Emmanuel Macron before his election as the president of the fifth or sixth nation of G20. But now he is a freshly appointed president and we can figure out better his personality, which is sort of strong, determined and driven. It's driven by Bibi aka Brigitte Macron his senior wife who is elegant and said to be intellectually brilliant. French press relates to him as Jupiter.

Now, the deal at the eve of 14th July for frenchies which is Bastille day for Americans, this deal is inviting with Grand Style the president of the United States of America to what is considered the epitome of Paris landmarks, I named the Tour Eiffel and ultra hipster one star at Michelin tho restaurant (not so hip but chic for tourists) Le Jules Vernes. Plus you really have to know that its Chef Alain Ducasse (on the right bending to listen to Bibi's recommandations under Melania's scrutiny on the picture) is the master of all chefs in France, said to be.

NB the only faux-pas to me is the too big too much pink and green flower bouquets on the tables, which I found a bit "japanese girlie" for the Donalds. rmf

today a slowfood recipe with zucchini

Question: why is it called slowfood?
Answer: cos almost every element comes from the next door food market nd will be cooked by you
Friends gave me a big zucchino from their garden. Yes, just one big enough to prepare à la provençale gratin for a whole family.
Recipe: fried onions and garlic in a pan with olive oil from Provence Alpilles, slice the zucchino in rather thin slices, keep them green so they stay crunchy but cooked, add some fresh herbs, thyme, rosemarin, zechuan pepper and salt plus grated macis, then pour the preparation in a gratin plate, whip 2 eggs with some fresh cream and grated cheese like peccorino or montasio and put in oven for 35mn at 6/7 | 180*C

RECETTE : la pizza aux pommes de terre | recipe for a pizza with potatoes, yummy!

hum that recipe is not a family one, in northern Venezia we don't have pizza, we eat pizza but the region food is about polenta more than pizza...But this one is simple and easy slowfood pizza to prepare, buy bread dough, fresh thyme and basilico, then work the dough as flat as you want, grate parmiggiano reggiano on it with the thyme, slice as thin as possible with mandolin or slicer the potatoes with or without their skin as you like it, is uptodate to keep vitamins and skin now, add some black olives, fresh thyme, roughly cut by hand the basilico leaves it's the way italians do, grate some more cheese, put to oven for 25mn on 6 a regular heat for a pie, pour crude vergin olive oil when the pizza is out ready.
